A New Flavour Inspired by Chile

¡Viva Chile! is a new riff on an old tradition in Chile.
This mild hot sauce is inspired by the traditional fresh Chilean salsa called "pebre" which is made with tomatoes, onions, cilantro, red wine vinegar, and the merkén pepper.
It goes with everything. Seriously, everything. Try it with fresh bread, on barbequed meat, with empanadas, or even alone just on top of tortilla chips. It's the cooked version of a delicious fresh salsa.
The merkén pepper is a smoked pepper (cacho de cabra), traditionally used in Mapuche cuisine. The Mapuche are the largest Indigenous group in Chile.
Ingredients: White vinegar, onion, tomato, red wine vinegar, merkén chili pepper, jalapeño pepper, cilantro, garlic, salt, sugar, xanthan gum.
